One more for today!
Last week Ryan and I went out to dinner with some good friends of ours. And, of course, since I've been posting so many pictures of cupcakes on Facebook recently, the conversation turned to cupcakes. We were talking about different cupcakes that sounded good, and Robert said, "Limoncello. Make a Limoncello cupcake" ( For those of you who don't know, Limoncello is a lemon flavored Italian liqueur). So I woke up the next morning thinking, "I'll bet I could come up with a way to do that." That thought was followed by, "I'll bet someone ELSE has ALREADY come up with a way to do that." So I Googled. And sure enough, I found what sounded like an awesome recipe. AND in the process, I also found yet another baking blog that I just love...Brown Eyed Baker. So, today was the day I made the wonderfully amazingly good Lemon-Limoncello Cupcakes....click here for the recipe: Lemon-Limoncello Cupcakes. It is super delicious. It was not quite as simple as some of the other recipes I have made due to some extra steps (like juicing and zesting the lemons), but definitely worth it. I'm sure you could eliminate the liqueur if you would rather. This is one I will most certainly make again. Can't wait to give some to Robert and Kim!

They look yummy! I would have to join a gym if I made cupcakes like yours! Ray and I love anything lemon. On the subject of lemon liquoer, have a recipe to make it. ;)
Nancy, if you, Ray, and those adorable girlies of yours come to visit us, I will make you guys some of these delicious lemon cupcakes! And then we can go for a run. ;-)

Thanks for the Lemoncello cupcake today! It was soooo yummy. Just the perfect light refreshing lemoniness (that should be a word) with a not too sweet frosting. You should come over more often...... and bring more cupcakes!!

Of course I will bring more cupcakes. You may have to tell me when enough is enough. LOL! And, btw, "lemoniness" IS a word...in my book. haha
