Homemade Granola

Last week I posted this picture on Facebook of the granola I had just made.  It was a huge hit and quite a few people asked for the recipe, so I thought I would post it here as well.  It is so simple to make, and tastes great.  It rarely lasts in our house for more than a day or two.  And the great thing about it is, you can personalize the recipe to what the people in your house like!

Ingredients:
4 cups old-fashioned oats
1 cup shredded coconut
1/4 cup packed brown sugar
2 tbsp vegetable oil
1/4 cup honey
2 tbsp maple syrup
1 1/2 tsp cinnamon
1 1/2 tsp vanilla extract
1 cup dried cranberries
1/2 cup sliced almonds
1/2 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup wheat germ

Instructions:
In a large bowl, combine the oats, nuts, coconut, and wheat germ; set aside.  In a small saucepan, combine the brown sugar, oil, honey, maple syrup, and cinnamon.  Bring to a boil.  Remove from the heat and stir in the vanilla.  Pour over the oat mixture and stir to coat.  Spread into a large, shallow baking pan (I like to use a jelly roll pan) and bake @ 350 degrees F for about 15-20 minutes, stirring occasionally.  Allow to cool before adding cranberries.  Store in an airtight container....if it lasts that long. ;)

I wonder how this stacks up in terms of fat, calories, fiber, etc. It looks really yummy. I may have to give it a shot to add to my lunch yogert.

I don't even know. I'm sure it's not low-calorie or low-fat, but it does have oatmeat, wheat germ, and nuts (which are good fat). Madelyn loves it on her yogurt, btw. :-)
