Last Sunday evening, I was sitting on the couch flipping through my new magazine full of cupcake recipes from Better Homes and Gardens. I came across a recipe for cinnamon roll cupcakes that sound so very good and I showed it to Ryan. He suggested that maybe I would bake some for a business meeting he had scheduled for early Monday morning. As I have said before, I'm not a huge fan of trying out new recipes for occasions or events. I like to make a recipe at least once and test it out on family and very close friends before serving it...particularly to people I don't know. But, I had been on a roll with new recipes recently, so I told him I would.
The recipe was pretty simple and I popped those babies into the oven, anticipating the rave reviews I would receive after Ryan brought them to his meeting (come on, isn't that one of the highlights of baking for people...them enjoying it and telling us how great it tastes??).
About midway through the the baking time, though, I knew something wasn't right. The cakes just didn't look right. They never did bake up the way they should have, and by the time the middle was baked, the edges were burned a bit. I took them out and put them on the counter, staring at these cupcakes all sunken in the middle. Not what you want to see when you are baking a masterpiece! haha!
Needless to say, I was very disappointed and Ryan went to his business meeting the next morning empty handed. :( Of course, I racked my brain trying to figure out what went wrong. I went over the recipe several times to see if maybe I missed something. I finally concluded that their recipe was faulty. LOL!!
Well, here we are, several days later and the funny thing is this...all those cupcakes have been eaten by my family this week. I didn't even put any frosting on them. Go figure.
I actually think I'm going to give this recipe another shot, with a few minor adjustments. I'll let you know how it goes!
