At the last minute yesterday evening, I remembered that I had promised a sweet, older woman from our church that I would bake her some banana muffins. So, I dug out my favorite banana muffin recipe and got to work.
I hadn't made these muffins in awhile and had forgotton how EASY they are! Fortunately, Saturday is my grocery day, so I did have some bananas on hand. I don't even wait for them to be over ripe, I just use them as they are.

I made them plain, but they are also good with nuts and/or chocolate chips (of course that's my favorite!)!
Banana Muffins (recipe courtesy of Cat Can Cook!)
Ingredients:
4 large bananas, mashed
1/2 cup sugar
1 slightly beaten egg
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup flour
Instructions:
Mix together mashed bananas, sugar, egg, and butter in a large bowl. Set aside. In a separate bowl, mix together baking soda, baking powder, salt, and flour. Combine the dry stuff with the wet stuff. Pour into greased muffin cups, or cupcake liners (this is what I use). Bake at 350 degrees F for about 20 minutes.
Super moist, super yummy, and super easy. That is my kind of muffin.
